A Veggie-Packed and Easy Meal Prep Dish
I am always looking for an easy and tasty dish I can meal prep that has the greens and protein I need to fuel me and this chopped Mediterranean salad does the trick! Yes, you will need to get out your knife but you won't have to start your oven and will only need one bowl! I hope you enjoy this veggie-packed and easy meal prep dish as much as I do!
INGREDIENTS:
1 large english cucumber, chopped
1 jar of roasted red peppers
1 can artichoke hearts, drained + rinsed
1/2 cup pitted kalamata olives
1 can chickpeas, drained + rinsed
8 oz pearl mozzarella balls (or sub feta)
1/4 cup olive oil
1/4 cup red wine vinegar
Juice of 1 lemon
1 tsp salt + additional to taste
1/2 tsp black pepper
1 tsp dried oregano
1 tsp dried basil
1 tsp garlic powder
1/2 cup fresh chopped cilantro
DIRECTIONS:
Rinse and drain chickpeas and set aside.
Chop cucumber, red peppers, olives, artichokes and cilantro then add to a bowl.
Add in drained chickpeas and mozzarella.
Adding olive oil, red wine vinegar, lemon and herbs and stir.
Chill and enjoy!
