Green Goddess Grilled Cheese

Veggie-packed comfort food!

Who doesn't love a good grilled cheese?! This sandwich contains some of my favorite foods packed in between two slices of bread and toasted to perfection.


I love the peppery kick of arugula but you can substitute with spinach if that’s more your flavor. And if you are a vegetarian, substitute the cheese with a dairy-free option and leave out the turkey. The pesto is the star of the show so lay it on thick!


I like to think the greens cancel out the carbs and cheese. So enjoy this veggie-packs comfort food with a glass of wine and less guilt!



Ingredients:

  • Basil pesto spread

  • Fresh mozzarella cheese

  • Arugula greens

  • Avocado

  • Sliced turkey

  • S + P

  • Get creative with your grilled cheese and pile on your favorite meat and veggies!

  • Slightly brown avocado is no big deal here as it will turn when heated up anyway.

  • For evenly toasted bread, melt butter in a pan before placing the sandwich rather than spreading on the slices.

  • Once you brown both sides of your grilled cheese, put the burner on low and cover to allow the inside to melt.
