Sweet Potato Brownie Ingredients

- 1/4 cup cocoa powder

- 1 teaspoon baking powder

- Optional: 1-2 tablespoons almond milk (adjust based on desired brownie texture – more milk for fudgier, less for drier)


Directions:

1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.

2. Pierce a sweet potato with a fork and bake it whole on the oven rack for 75 minutes until soft. Let it cool completely, then peel off the skin.

3. In a large bowl, mash the sweet potato and mix it with the nut butter and maple syrup until smooth.

4. Stir in the dry ingredients: cocoa powder, flour, and baking powder. Mix everything together until fully combined.

5. Fold in the vegan chocolate chips.

6. Pour the batter into your prepared baking dish and spread it out evenly.
