Chicken Crust Pizza

This was our first time trying a chicken crust pizza, and I wasn’t totally sure how it would land — especially with the kids. But it surprised all of us in the best way!


Normally, the kids leave the pizza crust behind, and we don’t push it. It’s mostly just carbs, and it’s not a battle worth having. This time was different. They were excited to eat the crust — because it was chicken and tasty!


What really impressed me is that it tasted like a truly good, homemade pizza. Even knowing the crust was chicken, it just came across like a snappy thin crust pizza -- nothing about it feels “off” or diet-like.


The kids ate every bite without any pushback, and for the first time ever, there wasn’t a single piece of crust left on any plate. Everyone — kids and adults included — went back for seconds, which made it clear this wasn’t just a novelty recipe. It’s easy, protein-packed, and flexible enough to customize, and it’s already earned a spot in our regular rotation.

Chicken Crust Pizza

Ingredients


Chicken Crust

  • 1lb ground chicken

  • 2 large eggs

  • 1/2 cup grated parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 1/2 tsp salt

  • 1/2 tsp black pepper


Toppings

  • 1/2 cup pizza sauce

  • 1 cup thick grated mozzarella cheese (low-moisture is my preference)

  • Turkey (or beef) pepperoni slices


Chicken Crust Pizza

Directions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.

  2. In a large bowl, mix the ground chicken, eggs, parmesan, garlic powder, Italian seasoning, salt, and pepper until fully combined.

  3. Transfer the mixture to the baking sheet and press it into a thin, even circle or rectangle. The thinner it is, the crispier it gets.

  4. Bake for 25 minutes, until golden and firm. Remove from the oven and let it rest for 5 minutes to set.

  5. Increase oven temperature to 425°F. Spread on pizza sauce, add cheese, and layer your toppings.

  6. Bake for another 10 minutes, until the cheese is melty and bubbly.

  7. Cool slightly, slice, and enjoy every crispy, cheesy bite!
