Loaded Burger Bowls

If you want the flavors of a classic cheeseburger without grilling or the buns, these loaded burger bowls are a great option. They use basic ingredients, come together in a few straightforward steps, and deliver all the familiar tastes — seasoned beef, fresh toppings, a creamy burger sauce and crisp potatoes. It’s a practical, build-your-own dinner that feels fun but stays manageable on a busy weeknight with kids.


With roasted potatoes, seasoned beef, and fresh toppings that come together as everything cooks, this burger bowl offers a clean, organized way to enjoy classic burger flavors in a lighter, more flexible format.


Ingredients:


Loaded Burger Bowls

Beef:

  • 1 tbsp olive oil

  • 1 onion, finely diced

  • 1lb ground beef

  • 1 tsp sea salt

  • 1 tsp sweet paprika

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ¼ tsp black pepper


Burger Sauce:

  • 1 cup mayonnaise

  • 2 tbsp finely chopped dill pickles

  • 1 tsp Dijon mustard

  • 1 tbsp ketchup

  • 1 tsp sweet paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1–2 tbsp water (or pickle juice) to thin


Toppings:

  • Chopped romaine

  • Shredded cheddar

  • Cut tomatoes

  • Thinly sliced red onion

  • Extra pickles


Potatoes:

  • 1.2 kg potatoes, cubed into 2 cm pieces

  • 4 tbsp olive oil

  • 2 tsp sea salt

  • ¼ tsp black pepper


Instructions:


1. Roast the Potatoes

  • Preheat oven to 475°F.

  • Toss potatoes with oil, salt, and pepper on a large sheet pan.

  • Roast 40 minutes, flipping once, until golden and crisp


2. Cook the Beef

  • Heat oil in a pan over medium-high heat.

  • Sauté onion 1–2 minutes, then add beef and cook until browned.

  • Stir in salt, paprika, onion powder, garlic powder, and pepper.

  • Cook 1 additional minute, then set aside.

3. Make the Burger Sauce

  • Combine all sauce ingredients in a bowl.

  • Add water gradually until smooth and drizzle-ready.


4. Assemble the Bowls

  • Start with a base of chopped greens (like living lettuce and romaine).

  • Add roasted potatoes, seasoned beef, shredded cheese, tomatoes, red onion, and pickles.

  • Drizzle generously with burger sauce and serve. I recommend tossing the meat in the dressing even!
