A Sneaky Vegetable Treat Your Kids Will Love
If you’re like me, trying to sneak more vegetables into your kids' diet can feel like a constant battle. This fluffy zucchini bread is a game-changer! Not only is it a fantastic way to use up that endless supply of garden zucchini, but it’s also a delicious treat packed with healthy ingredients. One of my favorite aspects of this recipe is the natural sweetness it gets from coconut sugar, making it refined sugar-free! The coconut sugar has a caramel-like flavor, but without the blood sugar spikes, making it a better choice for those post-dinner snacks. And let’s not forget about the magic combo of avocado oil and applesauce. The oil keeps the bread moist, while the applesauce adds a natural sweetness and gives the bread its soft, light texture. Ingredients:
- 2 large eggs (room temperature)
- ¼ cup milk (cow or nut alt. room temperature)
- ¼ cup avocado oil
- ½ cup coconut sugar
- 1 tsp vanilla extract
- ⅓ cup unsweetened applesauce
- 2 cups shredded zucchini
- 1½ cups flour
- 2 tsp baking powder
- 1 tsp baking soda
1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
Instructions:
Preheat your oven to 350°F. Grease or parchment paper line an 8.5 x 4.5-inch loaf tin and set aside.
In a large mixing bowl, whisk together eggs, nut milk, oil, coconut sugar, vanilla, and applesauce until smooth.
Fold in shredded zucchini.
In a separate bowl, combine gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Slowly add the dry ingredients to the wet mixture, stirring until just combined.
Pour batter into the prepared tin and bake for 45-50 minutes, or until a toothpick inserted comes out clean.
Let the loaf cool before removing from the pan. Slice and enjoy!
